Current Projects

This is the fabric that I'm going to use in the Lady of the Lake quilt block.  Got it all cut out before I had to be at work yesterday morning.  I didn't get to work on this during my lunch hour yesterday.  Had to run and get some yarn for the afghan that I am currently working on.

The lighter yarn is what I started with.  I had no idea what size I was going to make this afghan, so, I didn't buy two jumbo skeins of it.  Bad idea!!!  They discontinued the yarn at one Wal-Mart.  Went to another one.  They had some mauve.  Bought two of the jumbo skeins on clearance.

Got another afghan started.  Decided that I didn't want to take forever in getting the afghan finished.  I'm already behind!

Off I traipse to Hancock's Fabric for yet another shopping excursion.  This time I brought the afghan with me.  I had seen some purple yarn of the same kind and color as the first jumbo skein of yarn when I went to Hancock's on a previous shopping mission.  Alas, no match.  It was a shade different even though there was no dye lot.

I had to hurry up and decide what shade of purple yarn I wanted to go with the lighter colored purple.  I was on lunch and had to hurry up and get back to work plus stop and get something to eat.  After a few minutes of walking back and forth, I chose a darker purple yarn for an ombre look.

I came up with another idea as I am sitting here typing this up.  It will involve some frogging.  I'm going to make a border out of the dark purple instead of just continuing the way that I was doing.

I'm thinking of crocheting some flowers and add to a corner of the afghan.  I might have to do a bit of embroidery too....we'll see.

Progress

After a couple of false starts I finished this quilt block today.
It's called Broken Dishes.

I then decided to handpiece another block.  This is a modern twist on an old pattern.
This one is the Sanitary Commission block.

Now it's off to do a little bit of crocheting.

Old Desk Getting a New Makeover

My old desk is in sad shape.

I've had it since I was 9 or 10.

I glued the crack in the side and fixed the drawer.

It's all sanded down to the bones.

Spring is well on it's way.....

 The Hyacinths are blooming.

The Flowering Quince has been blooming off and on for quite awhile.

I completely redid this bed today.  Spruced the color up a bit.  Cleaned out the bed.  Added some fresh dirt from my compost pile along with some cedar mulch on top.  The Bleeding Hearts that are planted in here should be coming up in no time.  They are putting on lots of sprouts....

My Forever Project....

Not too long ago I started making hexagons for a quilt.  The quilt is going to be for a king sized bed.  Why is it going to take forever?  It's because the hexagons are only 3/4" in size.  I will need approximately 18,432 +/- for a quilt 96" x 108".  Now if I were to just cover the top of the bed and use borders for the side there won't be so many hexagons to come up with.  Ha!!!

I worked on putting some of the hexagons together today.  Here is what I got done.

Not sure if I want to keep this or tear it apart....

Baby Afghans

Just a couple of afghans that I recently finished.  I have one more to go.  I'm hoping to get back to working on quilts that are in desperate need of being finished.  LOL!!!

Chicken Enchilada Pie

I normally make chicken enchiladas rolled up using corn tortillas.  This time I made a pie instead.  I wanted it to last longer than 1 or 2 days.

You will need:

1 rotisserie chicken(I get the garlic flavored one and you will only need part of the it)
1 small onion chopped
2-3 garlic cloves chopped
4-6 whole roasted green peppers chopped
1 can nacho cheese soup or sauce
1 small can enchilada sauce(I use the red sauce)
corn tortillas
2-4c grated cheese(I used the fiesta cheese that has a mixture of cheeses in it)

Heat the oven to 350 degrees

Saute the onion and garlic in a bit of oil until it the onion is translucent.  Mix around 2 cups of the chicken shredded, the chopped green peppers, 1 cup of grated cheese, and the nacho cheese in a large bowl.  Add the onions and garlic and mix.  You might want to add a bit of milk to thin the chicken mixture.  Don't add too much or it will be soupy.

Pour around half of the can of enchilada sauce in the bottom of a 13x9 inch cake glass cake pan.  Spread it around.  Lay 6 corn tortillas on top of the sauce.  The tortillas will overlap a bit, but that is okay.  Spread a third of the chicken mixture on top of the tortillas.  Sprinkle some grated cheese on this.  Repeat 2 more times.  Add the final layer of tortillas to the top of the pie.  Spread the remaining enchilada sauce on top of the final layer of tortillas.  Sprinkle whatever amount of grated cheese you want on top.  I like cheese, so, I tend to put lots of cheese on top.

Cook it in the oven until it is heated thoroughly and the cheese is melted on top.  It will take anywhere from 30-45 minutes to be thoroughly heated.  Keep an eye on it so that the cheese on top doesn't burn.

Suggested garnishes:  shredded lettuce, chopped onions or chopped green onions, diced tomatoes, sour cream, sliced olives, Picante sauce, and Habenaro sauce(for those who like it spicy).

I'll add a picture as soon as I can get one taken......
